Spicy Chipotle Grain Sausage with Lemon, Sautéed Porcini Mushroom and Truffle Triangoli
This recipe sounds so impressive that I really should tell you that I spent hours in the kitchen preparing it. Nah…each ingredient is store bought, the only twist I added is lemon and the way I cook the triangoli, but it’s so delicious that it’s worth its own blog post. Boil a pot of water, toss in the triangoli and stir it so that the triangolies separate. Let it come back to a boil, leave for no longer than one minute. Pour into a colander then sauté in peanut oil until a little crispy and brown. Slice the sausage into coins and lightly sauté in olive oil, don’t overcook. Squeeze a lemon over them, add to triangoli and enjoy.
