Tofu with Black Beans and Hot Peanut Sauce
Extra Firm Tofu
Black Beans
Natural Smooth Peanut Butter
Olive Oil
Water
Hot Indian Chili Powder
Jalapeno Powder
Cumin Powder
California Chili Powder
Chipotle Powder
Cut the tofu block into thick pieces then press them flat between two plates. Be careful so they don’t crumble. Now cut them again to nice bite size pieces.
Fry them in olive oil until they brown on both sides. Remove from pan.
Put some water in the pan and stir in several tablespoons of natural peanut butter. (Natural means that the only ingredients are peanuts and a small amount of salt.)
Stir until you get a smooth saucy mix. It should be thin enough to pour, but not so thin that it looks watery. You may have to add water or peanut butter during the process. Once it has the right consistency add spices to taste, stir and let cook for a moment then add the black beans. Don’t forget to rinse them thoroughly first. Lastly, carefully stir in the tofu and it’s ready to serve.
It’s delicious with quinoa or basmati rice.
