Fresh Spinach Tortellini
Field Roast Chipotle Grain Sausage (very spicy)
Roasted Garlic Cloves (I buy mine from Whole Foods)
Roasted Corn
Green Peas
Brie
Extra Virgin Olive Oil
Salt
Boil the tortellini for about 3 minutes (brands vary, so be sure to check your package. You didn’t think I made tortellini from scratch, did you?)
Boil the peas and roasted corn in a separate pot, they usually take a little longer, so you may want to put them on first.
Cut the grain sausage into coins and sauté in olive oil on medium heat in a large frying pan. Only cook for a minute or two, then flip over.
Toss in a handful of roasted garlic cloves, peas and roasted corn and stir. Drain the tortellini and add them to the frying pan, stir well and lower heat. Add several slices of brie and place on top, cover with a lid, then leave on low heat until the brie begins to melt.
Lastly add salt and olive oil and it’s ready to serve.
