Grilled Cheese with Fresh Mozzarella Pear and Spinach

Pear season is here! Take advantage of this seasonal delicacy and make this simple yet delicious grilled cheese sandwich.

Whole wheat bread
Fresh mozzarella
Spinach
Pear
Olive Oil

Begin by toasting two slices of bread in a pan with olive oil, not for too long, just to warm the slices up a bit and get some of the good olive oil to saturate. Sautee the spinach in olive oil in a separate pan.
While you do that, cut the pear into very thin slices and the mozzarella into generous slices.
Once the spinach has wilted, add it to the bread along with your mozzarella and sliced pear. Put the second bread slice on top and let it grill under a lid. Flip it and cook until the mozzarella has melted and the bread is golden brown on both sides.
