Taco Tuesday? Nope Fredagsmys
Crunchy taco shells with soft black beans is a perfect combination. And if you make these on a Friday you can tell people that you are participating in the important Swedish tradition Fredagsmys, which means "Friday Cosy." Forget Taco Tuesday, Fredagsmys is the day when everyone eats tacos in Sweden. 😊
Taco Shells
Black Beans
Yellow Onion
Cumin Powder
Chili Powder
Chipotle Powder
Cayenne Pepper
Salt
Fresh Jalapeno
Pickled Jalapeno
Cheddar (always feel free to use vegan cheese in my recipes if you prefer)
Taco Sauce or marinara sauce with chili, cumin, and chipotle.
Saute the onion in peanut oil until they're browned but not crispy. Rinse the beans thoroughly. Squeeze them a bit to help them absorb your spices. Slice the jalapeno into coins, add them, spices and beans to the onion. Add a little water and olive oil and let it cook on medium heat. While the beans putter, heat the taco shells in the oven, your package will tell you at what heat and for how long.

When the shells are ready, fill with your bean mix, top with cheese, pickled jalapenos and your sauce of choice.
